Version 1 - with added yeast
4 cups of honey
1 gallon of water
3 cloves of nutmeg
1 large or 2 small
lemons (juiced, pulp reserved)
wine yeast
1) Crush the cloves (don't grind them).
2) Boil the honey, water, and cloves, skimming the foam, for roughly 30 minutes (until the foam stops rising).
3) Let it cool, add the juice and pulp from the lemons. Allow it to stand for two minutes, then strain.
4) Add the wine yeast (I used half a packet, but less would probably be fine).
5) Pour it into a jug with an airlock (see Airlocks), and leave for 1 month.
Version 2 - without added
yeast

3) Let it stand for 12 hours, add the juice and pulp from the lemons. Allow it to stand for two minutes,
strain into a jug with an airlock, and leave for 1 month.
